Each of our guests bedrooms is unique and luxurious in a truly captivating way with specially curated individual pieces for your relaxation and enjoyment. Beds, mattresses and pillows have been specially chosen for aesthetic appeal, sheer comfort and anti-allergy benefits. Sheeting and pillow slips from Ralph Lauren and Yves Delorme have a high percale count. Doonas have been specially chosen for our climate range.

The four bedrooms at Hillcrest are named after legendary grazing properties held in times past by the Hill family, which arrived in Australia in 1796.

Your well being is important to us. It is with our pleasure we invite you to enjoy a beautifully prepared breakfast of seasonal fruits, fresh baked French pastries, tea and coffee. Or alternatively, enjoy choosing from a selection of local produce from the fridge and pantry selected in line with your dietary requirements and enjoy the peace of preparing your own breakfast in your own time.

  • Sustainability is a major focus at Hillcrest. We harvest daily fresh produce from our herb, flower and vegetable garden when possible for our guests to enjoy. 
  • Our local butchers are renowned for their award-winning sausages and smoked meats, which feature in our breakfasts.  
  • We bake daily baguettes and croissants for our in-house guests to enjoy.

COMPLIMENTARY APERITIF 5.00 – 6.00 PM

We love the old fashioned custom of an aperitif as the afternoon moves towards evening. From 5.00 pm to 6.00 pm is Aperitif hour at Hillcrest. This is a special time to pause and enjoy the moment – a moment of tranquillity to relax into and enjoy on the veranda, by the French limestone fountain or in the serenity of the Drawing Room.

COMPLIMENTARY DRINKS

Our complimentary drinks provide a wonderful opportunity to sample award winning local and nearly local wines. Nick Buleid of Laggan – who became Australia’s third Wine Master, who is a professor of wine and who is a director of and shareholder in Brokenwood Wines – has a small personal vineyard at nearby Laggan at the very high altitude of 910 metres in a cool climate. We present his Hatherleigh Pinot Noir. Nick is adding in chardonnay vines which we are also undertaking at Hillcrest with his assistance. 

From Canyonleigh comes the wines of our great friend Katrina Hill’s Far Ago Hill from her vineyard and highly acclaimed winemaker Nick O’Leary. We present her award winning Pinot Gris together with her Syrsa Rose and Shiraz, and also Ken Cooper’s NSW Champion Rotherwood Pinot Noir from Sutton Forest. 

From award winning Collector Wines comes their  delightful Tiger Tiger Chardonnay. For a thirst quenching ale, we present the rising star boutique beers Obi & The Baron Pale Ale, Peelwood Road Porter and Uplands Single Malt from the nearby Laggan Brewery, which operates in conjunction with the Laggan Pantry.

COMPLIMENTARY CANAPES

Our complimentary canapes will take the edge off arriving for dinner hungry. Savour olives from the famous Alto Olives grove at nearby Peelwood of good friend Robert Armstrong. Australian award winning cheeses accompanied by wonderful relishes from our local producers The Laggan Pantry, Indulgence and H&H and special produce from Calegny Orchard and Hives.

Your kitchen with Butler’s Pantry comes fully equipped for you to summon your inner chef in the most beautiful surroundings for lunch and dinner.

STRESS-FREE COOKING PACKAGES

We also offer stress-free, cook-it-yourself packages which are changed seasonally and which support our sustainability local growers and suppliers. Taste the difference of seasonal produce grown in a biodynamic landscape of rich basalt and mountain loam soils in the 700 to 1,100 metre cool-climate range where growing conditions are ideal for a wide range of delicious edibles.

PRE-ORDERING

We request these cook-it-yourself packages be pre-ordered a week prior to your arrival. Upon confirmation of your booking and request for these packages, we will send you full details with costs for ordering the elements you wish to choose. Our Moorish lunch and dinner packages are designed for ease of preparation by you or your guests and cater for a wide range of tastes and influences.

We also provide barbecue facilities on the veranda alongside the outdoor veranda dining table that seats 10. We have a special wine fridge to ensure you wines are kept cool.

PICNICS

Picnics are special. And a wonderful way to relax. Should you desire a picnic hamper and a rug or two, we can prepare a special hamper with rug. This is an additional price and upon arrival information on our picnic hampers will be provided. 

ARRIVAL-DEPARTURE TIMES

We look forward to your arrival. For practical reasons, our arrival time is 2pm onwards and departure time by 11 am. Should you wish to vary this, we will look kindly on such depending on room availability. Please do not hesitate to request.

Our desire is for you to have a wonderful escape, enjoying Hillcrest and its surrounds to the fullest whatever your wishes. We are perfect relaxation, indulgence and restoration whilst luxuriating in beautiful splendour. Our focus is on your comfort and satisfaction at all levels: from this website and how you book in and contact us with your needs; from how you are welcomed upon arrival and settled in; how you are shown through Hillcrest; and how you are looked after throughout your stay. Having spent decades travelling the world and enjoying many superb establishments and some exceptional, we have set a very high standard for Hillcrest and refuse to compromise or lower the bar.

On your arrival, we will take a moment to determine your needs in food preferences, cooking needs and any allergens considerations; reading, videos, wi-fi; beyond the gate desires including any restaurant bookings; and intended departure requirements. We will walk you through Hillcrest and our immediate garden including for vegetables for familiarity.
